While I love speaking at events, and do so often, I was especially excited to speak at this one because not only is the subject of the movie a passion of mine, but the movie features some of nutrientrich.com's friends and advisers: <a href="http://en.wikipedia.org/wiki/Caldwell_Esselstyn" target="_blank">Caldwell Esselstyn MD</a>, <a title="T. colin Campbell" href="http://en.wikipedia.org/wiki/T._Colin_Campbell" target="_blank">T. Colin Campbell PhD</a>, and <a title="Pam Popper" href="http://wellnessforum.com/meetpam.html" target="_blank">Pam Popper PhD</a>,</p>
<p>This is an amazing movie and is one everyone should see at least once! I say this not only because this movie is helping thousands of people begin making the switch to a more plant-based nutrient-rich diet, but because it highlights the works of some of the biggest giants in the healthy-eating movement, including the authors of <a title="The Top 12 Findings of the China Study" href="http://www.nutrientrich.com/the-china-study/discover-the-top-12-findings-of-the-china-study.html">The China Study</a> and those involved in preventing and <a title="Heart Attack Proof" href="http://www.heartattackproof.com/">Reversing Heart Disease</a>. It's a combination of <strong>On Golden Pond</strong> and a hard-hitting expose of the truths about eating and what can happen when you stop eating nutrient poor and start eating in a plant-based healthy way.</p>
<p><strong>I was asked to give a short talk and answer some of the questions that were prompted by the film. </strong>In this approximate 7-minute clip, I answer a number of niche questions about olive oil, soy, pesticides, organic food, and deliver a whole bunch of other insights. Enjoy it. The event was a lot of fun! I implore you to see the movie, if you haven't already done so.</p>
<p>Today, there are so many people looking to find a way out of <a title="the 7 success results of nutrient rich healthy eating" href="http://www.nutrientrich.com/transformation/the-7-success-results-of-nutrient-rich-healthy-eating.html">the vicious cycle of eating nutrient poor</a>, and this movie screening just created another ripple in the big pond!</p>

<p>That's a famous line I touted about 7 years ago to an associate of mine, a PhD. nonetheless, whose head was in the gutter after he "wholeheartedly" made <em>the Switch</em> to nutrient-rich healthy eating.</p>
<p>One day, he "broke down" and ate a Kit-Kat. You know those crunchy chocolate bars that we grew up on, which I must admit are very yummy.  When he brought it to my attention, expecting me to unleash some motivational monologue and a great deal of tactical diet-speak, I said, "Howie, all you did was eat a Kit Kat."  That's how I left it. Because that is all that happened.</p>
<p>Howie, like so many others, was well into his nutrition transition at this time. He made the wholehearted and educated decision <em>to Switch</em>, away from eating predominantly nutrient-poor foods to eating in a nutrient- rich way, based on nutrient dense, vegetables, fruits, beans and legumes, nuts and seeds, and whole grains in great tasting ways. And. while he was eating 90% or more nutrient- rich foods, at the time, Howie had also decided to go 100% plant based, meaning Vegan with no animal foods whatsoever. He was still, as you can see, eating some refined foods.</p>
<p>I later explained to him that it would be good to lighten up and that it was this experience. I said that for all the reasons wrapped up in his decision to eat a Kit Kat, which require attention and time, that having 10% of your calories for old food favorites, or times when you can't get your preferences met, or to deal with any situation where things may go awry, just makes sense. I further explained that this was not a problem, but rather "par for the course."</p>
<p>Of course his past conditioning around dieting was getting in the way of this more liberated approach of "transitioning." I enlightened him to the fact that transitioning the way one eats is not limited to nutrition alone. and that that's why we were promoting the <strong>More Plant-Based Nutrient Rich</strong>® approach to improving the way one eats, and why <a href="http://www.nutrientrich.com/about/90-or-more-plant-based-nutrient-rich">90% or More</a> was the ideal to which we were all striving.</p>

<p>I began promoting the <strong>More Plant Based Nutrient Rich®</strong> approach to maintaining a nutrient-rich healthy eating style, long before the findings of <em>The China Study</em>--the most comprehensive study of nutrition ever conducted, determined that ideally less than 10% of our calories should come from animal products, if you choose to eat them, or the reinforcement from Joel Fuhrman, MD, who also adopted this idea.</p>
<p>I began thinking in terms of eating 80-90% or more, plant-based nutrient-rich foods, with approximately 10% or less of the foods you eat coming from nutrient-poor animal products and refined foods. I did so because I felt it was very practical, given the way people were used to eating for so many years, the fact that most people can't stick to diet programs perfectly, and the fact that you can't always control your own behavior, at certain times, let alone all external circumstances.</p>
<p>The philosophy was also driven by the reality that there are thousands of people who live to 80-90 years old, some even longer, if you are a "George Burns" type, who are eating the SAD Standard American nutrient-poor Diet. So, I figured that if you were eating 80-90% nutrient rich, instead of nutrient poor, you would probably live a very long and healthy life.</p>
<p>I put the emphasis on the <strong>90%</strong> later because of the stance taken in <a href="http://www.thechinastudy.com/" target="_blank">The China Study</a>, based on it's seminal findings, and the studies of the healthy life expectancies in the longest-lived populations, all or most of whom eat less than 10% of calories from animal products and refined foods.</p>
<p>John Robbins, who recently launched <a href="http://foodrevolution.org/cmd.php?af=1450140" target="_blank">The Food Revolution Summit</a>, was also a big factor in this. In his book, <a href="http://www.amazon.com/Diet-New-America-John-Robbins/dp/0915811812" target="_blank">Diet for a New America</a>, he said that no one would go hungry in the world if people simply ate 10% less animal foods than they are eating right now. He is also the author of <a href="http://www.amazon.com/Healthy-100-Scientifically-Healthiest-Longest-Lived/dp/1400065216" target="_blank">Healthy at 100</a>, which explains the secrets of the world's healthiest and longest lived people.</p>
<p><strong>So back to Howie. </strong></p>
<p>I didn't want him to make more out this situation than it needed. I later explained the philosophy, "out of mouth out of mind," and that while one of his old food favorites, Kit-Kat's, had been out of his mouth for a while, they were not just yet out of his mind, and he hadn't found a replacement. I said that he would continue to default to Kit-Kat's, during certain situations, as a coping mechanism like he had in the past, until he created a new habit or routine, or changed the situation itself. I explained that the situation would need to be addressed and that he needed to establish a new default that gave him that same pleasure, until he didn't need it anymore, even if the new default was nutrient rich!</p>
<p>I believe I introduced him to <a href="http://www.medjooldates.com/" target="_blank">Medjool dates</a>, a very sugary nutrient-rich food that is very sweet; so sweet they can put a Kit-Kat to shame. He tried them out, liked them, learned all about them, and discovered how to eat them, and eventually created a new default. Eventually, he also learned how to handle that situation very differently.</p>
<p>It's amazing what happens when you get new information and begin thinking differently.</p>
<p><strong>What's the moral of the story? </strong></p>
<p>There are several:</p>
<blockquote><p>a) There is more to changing the way you eat than food alone.</p>
<p>b) There is a nutrient-rich version or replacement for every food you are eating right now.</p>
<p>c) If you're going to eat as a coping mechanism, make it nutrient rich, so that you get other benefits and the consequences aren't nearly as negative.</p>
<p>d) Empathy goes a long way when addressing habits and reasons why you do what you do.</p>
<p>e) Even after you've make the decision to <em>Switch to Rich</em>, you will likely still eat a nutrient-poor food from time to time, even if you've gone Vegan. Vegan's are notorious for eating lots of refined junk foods even though they are not eating animal foods.</p>
<p>f) Understand that transitioning requires strategy(s) at times. It's not productive to turn your eating a "Kit-Kat" into personal, ego-driven, battle of staying on or falling off your diet. That's the industry of change; steer clear of all that diet speak and drama. There are reasons why things happen and why you do things. Take the intelligent approach, keep it impersonal, and address the present situation.</p>
<p>g) Sometimes you may just choose to eat a Kit-Kat and be completely in control; that's fine.</p>
<p>h) When you are eating <a href="http://www.nutrientrich.com/about/90-or-more-plant-based-nutrient-rich">More Plant-Based Nutrient Rich®</a>, that 10% is there, until you don't need it anymore. Default to it when you need to.</p></blockquote>
<p>I'm sure I could finish the alphabet with new "morals of this story," so to speak, but you should be getting the idea. Eating Nutrient Rich is not a diet all wrapped up in the "diet speak" of old. Forget all of that on and off the program, story-driven, emotional roller coaster-creating drama that so many of us have learned from the diet industry, which is used to make an industry out of something that shouldn't even be an industry, especially when the main goal is to keep people stuck <em>dieting, </em>indefinitely.</p>
<p>As you can deduce from this post, it's an industry that can snare even the smartest people, who have no yet learned that the power of <em>Switching</em> to a nutrient-rich healthy eating style. If you have not yet developed the psychology to support healthy eating, in an unhealthy world, and haven't yet learned the art and science of transitioning, you are at a disadvantage.</p>

<div><span style="font-size:11.0pt;Times New Roman&quot;,&quot;serif&quot;">The World Health Organization (WHO) has estimated that <strong>dietary factors are associated with at least 30% of all cancers </strong>in developed countries and up to 20% in developing countries. One of the <strong>biggest dietary culprits they uncovered was animal-derived foods</strong> [1, 2-7]. In fact, high meat intake has been estimated to increase your overall cancer risk by 17%, while high saturated fat intake increases your cancer risk by 19% [8].</span></div>
<div> </div>
<div><span style="font-size:11.0pt;Times New Roman&quot;,&quot;serif&quot;"><strong>It is a fact that throughout our lives we will all have cancer cells appear in our bodies. However, not everyone develops cancer, and usually this comes down to diet</strong> [1]. Animal proteins like meat, dairy, and eggs alter hormone levels in the body, cause inflammation, promote cell growth and tumor development, and make the body more acidic [2, 8-13]. All these changes "feed" the cancer cells and make them stronger. To make matters worse, as meat is cooked at high temperatures, potentially dangerous chemicals are produced. For example, heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs) can initiate the cancer process [14-20], while advanced glycation end products (AGEs) play an important role in the development and progression of atherosclerosis, diabetes, aging, and chronic renal failure [21-22].</span></div>

<div><span style="font-size:11.0pt;Times New Roman&quot;,&quot;serif&quot;"><strong>Although meat is often labeled the major culprit in cancers of the esophagus, lung, pancreas, stomach, colon, breast, and prostate, research has shown that other animal proteins, such as the casein found in milk, can promote cancer development as well.</strong> A 2007 study published in the <i>American Journal of Clinical Nutrition</i> reported that the consumption of dairy products affects the biological pathways associated with cancer development and spread [23]. After following participants for 65 years, the researchers discovered that a diet rich in dairy products during childhood nearly tripled the risk of colorectal cancer in adulthood.</span></div>
<div> </div>
<div><span style="font-size:11.0pt;Times New Roman&quot;,&quot;serif&quot;">More than 200 studies have shown that a diet based on fruits, vegetables, beans/legumes, raw nuts and seeds, and whole grains (as well as the countless meals and menus you can derive from these foods) provides significant protection against many different types of cancer. People with the highest consumption of fruits, vegetables, and whole grains have about half the risk of developing cancer as those who eat a more animal-based diet [24-27]. Based on the research of Dr. Campbell in the Cornell University<a href="../the-top-12-findings-of-the-china-study"><i>China Study</i>,</a> the ideal diet should be at least 90% plant-based foods and less than 10% animal-based foods [1].</span></div>

<div><span style="font-size:11.0pt;Times New Roman&quot;,&quot;serif&quot;">Dr. Campbell based his initial research on a preliminary study in which two groups of rats (one fed a 5% protein diet and one fed a 20% protein diet) were given cancer-causing aflatoxin. While every single rat in the 20% protein diet group developed liver cancer or pre-cancerous lesions, nothing happened to a single rat in the 5% protein group. Campbell conducted a similar study but used the milk protein casein to determine whether all animal proteins acted as cancer promoters. Like in the previous study, Campbell divided his rats into a 20% casein diet and a 5% casein diet and then exposed the rats to aflatoxin. His results supported the earlier research, and he reported that adjusting an organism’s protein intake could turn cancer promotion on and off like a switch [1]. Proteins derived from plants, however, did not have the same cancer-promoting effects.</span></div>

<div><span style="font-size:11.0pt;Times New Roman&quot;,&quot;serif&quot;">Many experts believe <span style="color:black">that this is due to the nutrient-rich nature of plant-based foods. <strong>Fruits and vegetables do not promote inflammation in the body, are rich in antioxidants that can neutralize cancer-causing free radicals, and do not contain bad fats such as saturated fat, trans- fat, or dietary cholesterol, which the body does not need to get from dietary sources.</strong> Plant-based foods also contain high amounts of fiber. Fiber acts like a filter in your digestive system, effectively removing cancer-causing substances from your colon. Fiber is also food for bacteria that thrive in your intestine, favoring the ones that reduce the production of cancer-causing acids.</span></span></div>

<div><span style="font-size:11.0pt;Times New Roman&quot;,&quot;serif&quot;;<br />
color:black"><strong>The health-boosting properties of a nutrient-rich, plant-based diet have also been shown to benefit people who have already developed cancer.</strong> A 2006 study showed that, in general, men with prostate cancer who avoided animal products reduced their PSA levels, which meant that their cancer was not advancing and may actually have been diminishing [28]. However, the cancer continued to worsen in the men who made no dietary changes. Such dietary changes were also shown to reduce the recurrence risk of breast cancer in postmenopausal women by about 25% [29].</span></div>

<p>One of the many things that I appreciated about this video, besides T Colin Campbells trademark humility and characteristic directness around the influences negatively affecting our food quality and choices, is that Bill Maher was already aware of this work and able be so in tune with Dr Campbell. In other words, even as early at 1-3-5 years ago, knowledge of the findings of the most comprehensive study of nutrition ever conducted were not even on the radar screen for most people let alone on prime time TV. </p>
<p>Fortunately, Real Time with Bill Maher is on HBO, so the message did not have to get watered down because of conflicts with advertisers selling message that simply underline any modicum of truth when it comes to food or the consequences of eating foods that don&#39;t promote health. In spite of that, the message of eating a plant based diet is really catching on. <strong>People want to be healthy!</strong></p>
<p><strong>The best key secret in health </strong>is the fact that you don&#39;t have to suffer from diabetes, heart disease and cancer, and you don&#39;t have to diet (proactively restrict your eating and not get your needs met) ever again, to live at <em>or near</em> your ideal weight. All of that changes when you start eating Nutrient Rich. </p>
<p>For many, that seems unbelievable! Aren&#39;t these diseases expected as you age? Yes, but only if you are eating a nutrient poor diet. Which bring up another point I noticed in this video...</p>
<p>T. Colin Campbell, is vegan I meaning 100% of what he eats is plant based, even though that wasn&#39;t always the case. He makes the point that you don&#39;t need animal products let alone refined foods in your diet. </p>
<p>You could see he was a bit hesitant though when asked if he consumed any animal products; and Bill Maher asked about whether small amounts of animal products were ok? <strong>This, is the big questions people are reconciling today.&nbsp;</strong></p>
<p><strong>To eat &quot;healthy&quot; do I need to be a vegan or vegetarian and never eat meat? </strong></p>
<p>The answer to this is NO, but that does not mean we need to promote animal products for nutritional reasons, as if you were going to be unhealthy or get skinny, or lose function without the consumption of animal foods each day. People lose function eating animal foods. </p>
<p>Animal foods are nutrient poor; they are rich in some nutrients, but as whole foods they are nutrient poor. Yet, you can still consume small amounts of animal products and still be eating nutrient rich on total dietary intake basis. </p>
<p>And that is why we promote the <strong>90% <em>or More</em> Plant Based, Nutrient Rich</strong> eating style, which is less about arguing the difference between eating meat or not and more about health, personal performance and natural weight loss. If you want to or feel you need to consume small amounts of animal products in your diet at this time, that fine, but the reality is, getting to 90% or More Plant Based Nutrient Rich is the key to healthy success. </p>
<p><strong>It&#39;s not about fighting the fight between plant and animal foods, it&#39;s about what&#39;s best for your body, energy metabolism, your weight, your health and your personal performance. <br />

It also let&#39;s you know that eating a plant based diet is catching on. 				<content:encoded><![CDATA[<p>Last night over 500 people descended on the Sunrise Theater in New York City to see the NY Premier of <a href="http://www.forksoverknives.com/" target="_blank">Forks Over Knives</a>, the new movie that is inspiring audiences all over the US and abroad to consider, if not make the switch to a whole foods, plant based, nutrient rich diet. At the Premier, we all mingled for a few hours around some incredible plant based nutrient roods at the <a href="http://wholefoodsmarket.com/stores/bowery/" target="_blank">Whole Foods in the Bowery section of NYC </a>and most everyone in the room was inspired to learn how to start eating healthy.</p>
<p>No one was disappointed!</p>

<p>I should emphasize the under-appreciation for these two research and medical professionals and down right fine people. The reason is simple; what they are saying is true but just not good for the <em>&quot;HUGE inter-connected, money-driven &ldquo;Med-Pharma-USDA-Academia-Food-Insurance-Media system&rdquo;</em> which my new friend and associate Jim Hicks, talks about in his new book <a href="http://hpjmh.com/3-latest-posts/" target="_blank">Healthy Eating, Healthy World</a>. His research indicates that 70 to 80% of our health care dollars ($2 trillion of them) are driven by what we eat &mdash; our toxic western diet. <p>Personally, I have a great deal of experience with both Dr&#39;s having assembled <em>The Top 12 Findings of <a href="http://www.thechinastudy.com/" target="_blank">The China Study</a></em> with the Campbells (Father and Son) who wrote this hugely successful book revealing the relationship between diet (lifestyle) weight loss and long term health, and having learned from and promoted Dr. Esselstyn&#39;s work for years. He is the author of Preventing and <a href="http://www.heartattackproof.com/" target="_blank">Reversing Heart Disease </a>and a long time senior medical officer at The Cleveland Clinic.</p>
<p>These gentleman are major players in the plant based food movement now in the later half of their careers, both of which ironically began promoting or serving the effects of animal based diets. They were major players in their fields even before the switch to plant based nutrient rich foods began and made the switch themselves when they realized that animal based diets also rich in refined and process foods, causes disease.</p>
<p>These days, T Colin Campbell PhD and Caldwell Esselstyn MD have become &quot;very&quot; well known as <a href="http://www.nutrientrich.com/1/president-bill-clinton-now-eats-a-plant-based-diet-and-credits-the-china-study-t-colin-campbell-caldwell-esselstyn-and-others.html" target="_blank">President Clinton recently mentioned their names in a viral CNN interview with Wolf Blitzer</a>, as he explained his own <a href="http://www.nutrientrich.com/t-colin-campbell-2/clintons-dramatic-natural-weight-loss-eating-a-plant-based-diet-interview-with-his-doctors.html" target="_blank">transition to a plant based diet</a> to finally resolve his own heart disease.</p>

<p>Don&#39;t believe the hype when people tell you, you should be running your body on nutrient poor animal protein and saturated fat with a side dish of nutrient rich vegetables anymore, when a true nutrient rich diet is the way to go.</p>
<p>I also caught up with with Dr Pam Popper of <a href="http://www.wellnessforum.com/" target="_blank">The Wellness Forum</a>, in Columbus Ohio; she and Rip Esselstyn were conducting a plant strong Education Immersion at Whole Foods. <strong>We talked about having never seen the switch to plant based nutrient rich foods be so strong</strong>, and how the movement is happening in an accelerated fashion now in part because of movies like<strong> Forks Over Knives</strong>. A movie like this is all the more powerful now having decades of amazing data and insights, like those from Dr&#39;s Esselstyn and Campbell&#39;s work, to convey in the cinema. Gone are the days of passion and principle alone; today, plant based diets are proven with sound science.</p>
