Even some of the sample menus published by the National Institutes of Health for 1200 and 1600 calorie plans don’t meet the recommended daily values set in place by the government.</p>
<p>Why is that? The sample diet plans simply aren’t nutrient-rich enough. Most of the food choices on the diet plans are surprisingly low in important nutrients, like vitamin K, chromium, folate, and magnesium, which can be found in a 90% plant-based diet.</p>
<p>But there’s no need to worry about your calorie count when you’re eating nutrient rich. <b style="mso-bidi-font-weight:normal">Eating your way up to 90% <i style="mso-bidi-font-style:normal">or more</i> plant-based nutrient-rich foods doesn’t mean that you’re on a diet. And, you don’t even have to become a vegan or vegetarian, since a vegetarian diet doesn’t necessarily guarantee good health. </b></p>
<p>People who don’t eat animal products, but continue to gorge on pasta, bread, bagels, and other refined carbohydrates may be eating low-fat, but they’re definitely not getting enough vitamins, minerals, and phytochemicals to protect their health. Refined grains are dramatically low in fiber, so they also won’t help you to feel full after eating them. This again leads us back to the cycle of constant overeating due to a lack of nutrient-dense foods that are low in calories, causing your body to naturally feel full after a meal.</p>
<p>To spell it out for you, eating a strict vegan or vegetarian diet is not always the same as eating a 90% <i style="mso-bidi-font-style:normal">or more</i> plant-based nutrient-rich diet. A vegetarian may eat a diet made up primarily of refined grains and processed health food products, yet they may still be missing out on valuable fruits, vegetables, and beans to balance their nutrition. But let’s not forget about the fact that vegetarians in the US have significantly lower cholesterol rates because they are not eating animal products. This reduces the risk of cancer, heart disease, high blood pressure, diabetes, and obesity, causing them to live longer. So, whether or not you are a vegetarian, you can receive many of the same benefits by eating 90% <i style="mso-bidi-font-style:normal">or more</i> plant-based nutrient-rich and cutting back dramatically on the animal products that you eat.</p>
<p>By the way, with all the talk on global warming – imagine losing weight the nutrient-rich way, and reducing the environmental impact of the foods you eat. According to <a href="http://www.farmusa.org/">http://www.farmusa.org/</a>,</p>
<p>a diet full of animal products is not only responsible for disease, but it requires 10 to 20 times as much land as a plant-based diet. More than half of the soybeans and grains in the world are fed to animals, resulting in a serious food waste. To give you a better idea<b style="mso-bidi-font-weight:<br />
normal">, if meat consumption in the US dropped by even 10%, it would free up enough food sources to feed millions of starving populations in the world.</b></p>
<p>Animal agriculture has also caused mass devastation by cutting down forests for cattle pastures. Animal feed crops have a constant need for irrigation, using up 80% of all water available for human consumption and causing serious water shortages all over the world.</p>

<p>It's people like you (if you are reading this) who inspire me to strive for eating the best I can throughout the year, whether it's a holiday or not. People like us are not necessarily healthy nuts, we just want to eat in the healthiest and most successful way, without having to be perfect or sacrifice great taste.</p>
<p>Well, there is no other holiday that currently supports you in healthy eating like Thanksgiving!</p>
<p>Thanksgiving is already the most nutrient-rich holiday there is, with all the vegetables and fruits and the down-to-earth feeling you get on Thanksgiving day... where it's all about being truly grateful for all that we have in our lives. A<strong>fter all, we are the luckiest people who have ever been born to date</strong>, throughout all of history, who have access to so many technologies and healthy food, sanitation and for the most part freedom from fears associated with mere survival. It's an amazing time to be alive, particularly if you don't get caught up with a lot of modern pitfalls.</p>
<p>One such pitfall, as you know, is eating nutrient-poor food, especially when it's so simple to make the switch to nutrient-rich and get all the benefits of healthy eating, without having to be perfect or sacrifice great taste. This is a far cry from what healthy eating used to be.&nbsp;</p>
<p>Well, Thanksgiving is a holiday already rich with nutrient-rich foods; but did you know you could actually go through this holiday and <a href="http://www.nutrientrich.com/eat-your-way-up-to">eat up to 90% <em>or more</em> plant nutrient rich </a>foods, in the greatest tasting ways and wake up the next day feeling great without the ensuing cold that will befell so many people because they basically ate a heart attack on a plate and all the junk food they could to overwhelm their bodies?</p>
<p>In the past, Thanksgiving has been some sort of license, not only to overeat, but to also overwhelm your body with nutrient-poor foods too, like cake and pie etc, as if it is OK, just because it's a holiday. I mean, you can eat whatever you want, but you know you can't eat <em>whatever, whenever</em> and get the results you want. So if you want to have a great Thanksgiving, which may include eating more than you usually do (after all it is a feast), and feel good afterwards, then make this a nutrient-rich Thanksgiving!</p>
<p>Instead of eating meals heavy with calorie-rich, nutrient-poor animal products and ultra refined food stuffs, eat smaller amounts of Turkey and other animal products and discover the dozens, actually unlimited number of ways to eat plant based, nutrient rich menus.</p>
<p>Here's are two nutrient-rich recipes for Thanksgiving</p>
<p><strong>Porcini Mushroom Gravy. </strong></p>
<p><strong>Ingredients: <br />
	</strong></p>
<ul>
<li>1/2 cup dried porcini mushrooms</li>
<li>1 medium onion, thinly sliced</li>
<li>6 cloves garlic, minced</li>
<li>1 cup mushrooms sliced (your choice)</li>
<li>3 tablespoons whole wheat flour (get 365 from whole foods)</li>
<li>2 tablespoons nutritional yeast</li>
<li>1 tablespoon Bragg Liguid Aminos</li>
<li>1 Tablespoon <a href="http://www.nutrientrich.com/shop-drfuhrman/matozest-vegizest">Dr.Fuhrman's Vegizest</a></li>
<li>1 cup water</li>
<li>1/2 tablespoon balsamic vinegar</li>
<li>1/8 teaspoon dried sage</li>
<li>1/8 teaspoon black pepper.</li>
</ul>
<p><strong>Cauliflower with an Attitude (the healthiest mash potato like dish you will ever eat!)<br />
	</strong></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>6 Cups cauliflower florets, fresh or frozen</li>
<li>6 cloves garlic, roasted</li>
<li>10 ounces fresh spinach</li>
<li>1/2 cup raw cashew butter (soy, hemp, or almond milk if needed to thin)</li>
<li>2 tablespoons Dr. Fuhrman's VegiZest</li>
<li>1/4 teaspoon nutmeg.</li>
</ul>
<p>* Keep in mind the nutrient density of cauliflower is stratospherically higher than white potatoes or even sweet potatoes for that matter. It is a cruciferous vegetable with incredible anti-cancer properties according to Dr. Fuhrman. So why not explore a great-tasting mashed potatoes-like dish that provides incredible health benefits at the same time? Enjoy.</p>
<p><strong>Some Nutrient-Rich Holiday Tips</strong></p>
<p>	1) Instead of ice cream, eat vice cream – real food ice creams that are made from cashews, water, maple syrup and vanilla, for example.&nbsp; </p>
<p>	2) Rather than seasoning the sweet potatoes with butter or margarine, add orange, pineapple, apples, pecans, cinnamon, nutmeg, date sugar, maple syrup, lemon, and/or lime, to add even more flavor.</p>
<p>	3) Enjoy freshly-baked bread by itself – there is no need to spread on the artery-clogging butter when whole grain breads and healthy spreads are all around us. You can use raw nut butters, apple butter spreads and others. </p>
<p>	If you choose to leave some of your old food favorites as is, eating smaller portions will likely not happen. So, make the majority of your meals with Nutrient-Rich Recipes, and you won’t have to eat as much to get full. You’ll get fulfilled faster eating nutrient-rich foods when hunger shuts off. 				<content:encoded><![CDATA[<p>This is what most people go through when transitioning from nutrient poor to a plant, based, whole foods, Nutrient Rich diet. What you'll notice is that until you actually go the next level in healthy eating, you will suffer from one diet trap after another!</p>
<p><strong>Ref: <a title="The Food Class System" href="http://www.nutrientrich.com/food-class-system/food-classification-chart" target="_self">The Food Class System</a></strong></p>
<blockquote><p>1. <strong>We eat the standard American diet (SAD) - including limited amounts of 1st class</strong> <strong>nutrient rich foods. </strong><br />
Basically 80-90% 2nd and 3rd class foods which are nutrient poor, overly concentrated, and overly stimulating, leave us over fed, yet chronically undernourished, driving us to over consume.</p>
<p>2. <strong>We then eat less of the SAD otherwise known as "dieting" and this </strong>means less of the nutrient poor foods that are not serving us to begin with, or promoting our health as a whole, and this makes you feel like you're starving, reinforces craving  and overeating. You are merely riding the fence, trying to eat better, yet predominantly nutrient poor at the same time. This is a weight gain diet, posing as a weight loss diet.</p>
<p>3. <strong>We get so frustrated and go back to one, because we want the freedom </strong>of "just eating" what's there and as much as we want. S0, we head back for pleasure. Problem is we're headed back to nutrient poor foods as the basis of our diet which undermines our health, happiness and personal performance.</p>
<p><strong>4. You may go through this process (</strong><strong>1-3) a few times.</strong> <strong> </strong>This makes sense given the strategy up until this point, doesn’t work and really can't work for anyone. <strong><br />
</strong></p>
<p>5.  <strong>Eventually, we start to "get" that we need to being eating <em>predominantly</em> first class, nutrient rich foods with small amounts of second class foods if you eat them, and very small amounts of third class foods if you eat them at all; </strong>but instead of eventually going 90% of the way, or more, you sit on the fence, doing the same you've always done eating long shelf life animal based products, and economical, highly refined over stimulating foods because you are used to them and know them better. While eating a little bit healthier it's not enough change to give the shift any momentum. This is the "wash your pastry down with some veggies", "take your vitamins", "eat healthy when I'm sick", and the "token vegetable on the side" strategy. It always fails because while eating a little bit better is good, eating healthy is what works!</p>
<p>6.  <strong>We may again go back to #1. </strong></p>
<p>7.  <strong>Then we get smarter and realize that we have to a)</strong> go beyond eating "plain vegetables" at a time when our taste buds are geared for sugar cereals, bagels and butter, pretzels, steak, pasta, cake... and <strong>b)</strong> <strong></strong>let our taste buds adjust as we focusing on how to shop, organize, prepare and eating out the nutrient rich way; discovering the full breadth and depth of  eating a great tasting nutrient rich diet style, and<strong> c)</strong> get into a <a title="performancelifestyle.com" href="http://wwww.performancelifestyle.com">more  successful lifestyle</a> - no wonder we get the wrong impression when it comes to eating healthy. (BTW, when it comes to eating Nutrient Rich, "boring" is a word that just does not apply).</p>
<p>8.  <strong>The taste bud adjustment period is the only tough time you'll have, not because the foods you're now choosing</strong> to eat aren't great tasting, but because you'll experience some withdrawal symptoms from <a title="The Food C;ass System" href="http://www.nutrientrich.com/food-class-system/food-classification-chart" target="_self">2nd and particularly 3rd class foods </a>which are low in nutrients or have all the nutrients stripped out and only the pleasure inducing chemicals left in. So, while perhaps less intensive, it's a little like getting off drugs! We have to be careful not to associate the pain of withdrawal from the lower class foods, to the emerging pleasure of health promoting, Nutrient Rich foods, which frankly taste better.</p>
<p><span style="text-decoration: underline;"><strong>You decide to go to the next level in healthy eating! </strong></span></p>
<p>9. <strong>Then you realize "hey there are more great tasting foods to eat,</strong><strong> that are Simple, Quick &amp; Easy to eat </strong><strong>than there are days in the year!</strong> You feel good while you're eating and even better after, and you can avoid all the dieting "traps" behind. You can just live and be free and enjoy all the discovery of nutrient rich foods, from fast to gourmet made from predominantly, if not all, first class foods - vegetables, fruits, legumes/beans, raw nuts and seeds, whole unrefined grains and natural seasonings, sauces and gravies that make already great tasting foods taste even better!!</p>
<p>10. <strong>You may again go back to testing the old foods, but this is only normal!</strong> Just do it, get the experience and press on towards eating first class Nutrient Rich foods anyway.</p>
<p>11.  <strong>After a while your taste buds shift and you realize you are achieving weight loss in the process of getting incredibly healthy.</strong> And there is no reason to turn back to foods that make you overweight and sick, despite the fact that they are designed to stimulate your taste buds and they still will. But eventually you resolve to say that the secondary effects of these food stuffs, beyond the initial pleasure-inducing chemical "hits", can not be tolerated by your body, so you go after more of a good thing! More great tasting health promoting nutrient rich foods that give you optimal health and the foundation for high performance.</p>
<p>12.        <strong> You realize that weight loss is just one of the many benefits of something bigger and more important - health and high performance. </strong><span style="color: #0000ff;">During this phase you can lose a lot of weight as your body starts getting healthy food consistently for maybe the first time in your life. There are many dynamics going on during this phase but the biggest is that your body begins a major transition towards health and literally rebuilds itself using better quality foods.This is a very fun period!<br />

<p>13.        <strong>High performance is now possible because your body IS nutrient rich always satiated and full.</strong> Combined with the other aspects of a <a title="performance lifestyle.com" href="http://www.performancelifestyle.com" target="_blank">PerformanceLifestyle</a> - you start getting a real handle on your lifestyle and   become very passionate.</p>

<p>Again, there are lots of little steps and dynamics that go on in this process, but these are the basic steps a person goes through when they are transitioning to a nutrient rich diet.</p>

<p>As you can imagine, as a registered dietitian I often hear the question "How much should I weigh?" from not only clients, but friends, family, and total strangers who I happen to strike up a conversation with while food shopping. In the dietetic community, we are taught to use formulas to calculate someone's "ideal body weight". In the doctor's office, you may already be familiar with the BMI chart, which is just another way to tell you if you are at or above your "ideal body weight." Don't get me wrong, both do have their uses. But they are not the be all, end all.</p>
<p>In today's society, we eat too many nutrient poor foods, and we eat too much of these nutrient poor foods. Then we jump from one fad diet to the next, hoping to find that "magic bullet" to cure us of our weight problem, which many times, becomes a lifelong battle. Here at Nutrient Rich.com, we hope to help you break through those diet traps once and for all.</p>
<p>I'll let you in on a little secret-- I really don't like the term "ideal body weight." Why? Because it perpetuates the obsession that is running rampant in society about reaching that "ideal number". People are absolutely obsessed about that pesky "number on the scale." I see it and hear it all the time. Instead of obsessing about "that dreaded number" which probably keeps you up at night, wouldn't you rather turn your brain power and energy into something more productive to move forward with your life?</p>
<p><strong>I'd like to help you with that.</strong></p>
<p>I'm not saying that you shouldn't be concerned with your weight. Au contraire! I'm just saying that you would have a healthier mindset if you think more along the lines of <strong>"natural weight"</strong>. Dr. Fuhrman explains in his newly updated book <a title="The gold standard nutrient rich program" href="http://www.nutrientrich.com/joel-fuhrman-md/the-gold-standard-for-healthy-eating.html" target="_self"><span style="text-decoration: underline;">Eat to Live - The Amazing Nutrient Rich Program for Fast and Sustained Weight Loss</span></a> that "all formulas that approximate ideal weights are only rough guides, since we all have different body types and bone structure." He goes on to say, "Once the fat is off your body, your weight will stabilize.
